1898 wurde auf dem Land der damaligen preußischen Staatsbahn,
unweit der Moltkebrücke und des Reichstages jenes Fachwerkhaus
errichtet, das seit 1987 den Namen Restaurant PARIS-MOSKAU führt.
Es wurde von Gustav Jahn, dem vormaligen Limonadenbudenbetreiber
auf dem Hamburger Bahnhof als einfache Gaststätte eingerichtet.
Die Lokalität hieß »Kindl Stube«. Nach dem 1. Weltkrieg übernahm
Familie Tees das Lokal. Tees betrieben auch die Gastronomie »in
den Zelten« neben der Krolloper, heute das Haus der Kulturen der
Welt.
1945 ging das Haus in neue Hände über, nachdem es fast als
einziges Gebäude der Umgebung, den erbitterten Kampf um den
Reichstag unbeschädigt überstanden hatte. Die dritte Besitzerin,
die legendäre »Mutter Busch«, betrieb die Kneipe bis 1975 als
»Schultheiss-Klause«.
Im März 1984 kaufte Wolfram Ritschl das Haus. Nach umfänglicher
Modernisierung und Neugestaltung eröffnete er das Lokal am 10.
August 1984 als russisches Restaurant »JOSEF«. Die Innengestaltung
der Räume lag bei der Malerin Anke-Paula Gentner, die heute in den
Cevennen, Südfrankreich, lebt und arbeitet (www.cevenne.info).
Der klare, weiße Raum wird durch konstruktivistische Wand- und
Deckenmalerei gegliedert. Die puristische Auffassung, ja die
"Kunst des Weglassens" war Anke-Paula Gentners Motto.
Die erste Etage des Restaurants hat drei kleine diskrete Räume,
die besonders für Feiern geeignet sind. Schon im Juli 1985 endete
die »russische Phase« in der Geschichte des Hauses. Mit dem
Namenswechsel 1987 zu PARIS–MOSKAU spürten wir 1987 die neue
Freiheit in Rußland auch als Möglichkeit für den Westen und
kreierten den Haus-Cocktail »Glasnost« (Kir Royale und Vodka
Gorbatschow).
Das fünfköpfige Köche-Team im PARIS-MOSKAU sorgt täglich für ein
exquisites kulinarisches Angebot. Alle Speisen werden frisch
zubereitet. Wechselnde Menüs und eine feine, saisonale Karte sind
das Programm der Küche.
Die Weinkarte bietet rund 220 Positionen aller Preislagen aus
dreizehn Ländern, darunter 8 offene Weine und 8 halbe Flaschen.
Ein feines Königs Pilsener vom Fass wird auch sehr gerne serviert.
Das umfangreiche Angebot an Digestifs rundet jeden Abend
vortrefflich ab.
Die umfassenden Bauarbeiten für den Neubau des
Bundesinnenministerium haben auch dem PARIS-MOSKAU einige
Zumutungen auferlegt. Jetzt ist aber eine sehr gute Nachbarschaft
und eine Fertigstellung erreicht worden.
Das PM hat von Montag bis Samstag ab 18 Uhr für Sie geöffnet und
ebenfalls Montag bis Freitag auch gerne mittags ab 12 Uhr.
Sonntag ist Ruhetag (nach Vereinbarung öffnen wir für größere
Gruppen).
It was in 1898, not far from Moltkebrücke, Bellevue Castle and
"Reichstag,“ that this half¬timbered house was built, which has
been carrying the name PARIS-MOSKAU since 1987.
It was set-up by Gustav Jahr as a tavern with living rooms on the
first floor. The inn was called "Kindl Stube.“ After World War I,
the Tees family took over the tavern and even built a bowling
alley behind the house in the twenties -- which had still been in
use until 1985, but had to give way to the planned extension with
a large kitchen, light and sunny rooms, and terraces in the years
to follow.
In 1945, the building -- virtually the only one to have survived
the fierce battle for the Reichstag undamaged – changed owners.
The third owner – the legendary "Mother Busch" – ran the pub until
1975 under the name "Schultheiss-Klause.“ Long-distance lorry
drivers and assemblymen were amoung the guests – but also people
from East Berlin who were still able to afford the low prices
until the erection of The Wall in 1961 put an end to this kind of
meeting place where East met West. After Mother Busch died way too
early, the pub deteriorated. The beautiful rustic-style wooden
panels were destroyed, and formica and cheap ornamentation were
put in its place.
In March of 1984, Wolfram Ritschl bought the house. After
extensive modernization and restructuring work, he openend the
Russian restaurant "JOSEF". The interior design and decoration of
the premises were created by the painter Anke-Paula Gentner. The
clear white room is structured via constructive mural and ceiling
paintings. The puristic attitude – which one might even call the
"art of omission" – was Gentner's motto.
The first floor of the restaurant has three small and artfully
designed rooms which are particularly weil suited for festivities
and business events. As soon as 1985, the "Russian phase" in the
history of this house was over. By changing the name to
PARIS-MOSKAU in 1987, we took up the idea of the newly won freedom
in Russia as an opportunity for Berlin, and created our own
special cocktail called "Glasnost" (Kir Royal and Vodka
Gorbatschow). Since 2006 we offer Cocktail “Gazprom”.
The name of PARIS-MOSKAU is, at the same time, an allusion to the
120-year old railway connection between the two cities, and to the
location of Berlin as "connecting link" between East and West. The
Fall of the Berlin Wall on November 9th, 1989 had people from the
Eastern part of Berlin celebrating this historic moment swarm all
over the area of this once isolated and lonely restaurant on the
very same memorable night. Finally, the building – previously
located in an isolated area – lived up to its idea of the Golden
West. Until this day, PARIS-MOSKAU continues to be committed to
the idea of Berlin as a link between East and West.
The crew of 5 in the PARIS-MOSKAU kitchen offers exquisite
culinary treats on a daily basis. All meals are prepared fresh.
Menus change according to season, offering a fine selection of
different dishes every day. Special emphasis is on the preparation
of fish and seafood. The impressive wine list, a fine Pilsener
draft beer, and a nice selection of digestifs round off the
comprehensive offer.
The cosy summer garden with a view of the Government Quarter with
the Chancellor's Garden and the Berlin skyline is particularly
popular.
The PM is open for you from Monday to Saturday from 6 pm and also
Monday to Friday from 12 noon.
Sunday is a day off (we open for larger groups by arrangement).
Cette petite maison en colombage était construite comme poste
d'aiguillage en 1898 sur le terrain du chemin de fer de l'Etat
prussien, non loin de Moltkebrücke et du Reichstag. Depuis 1987
elle héberge restaurant PARIS-MOSCOU.
En 1897, Gustav Jahn, l'exploitant de baraques de limonades à la
gare de Hambourg (jusqu'à sa première transformation au musée de
train de fer de la Prusse en 1897), fit aménager la bâtisse comme
restaurant avec des locaux d'habitation au 1er étage.
L'établissement s'appelait »Kindl Stube«. Après la 1ère guerre
mondiale, le bistrot était repris par la famille Tees. Les Teess
géraient également la gastronomie »dans les tentes« à côté de la «
Krolloper » , à l'emplacement actuel de la maison des cultures du
monde. Dans les années vingt, la famille du propriétaire ajoutait
une piste de quilles derrière la maison qui était encore pratiquée
activement jusqu'en 1985.
En 1945 la maison passait dans de nouvelles mains, après avoir été
préservée par miracle comme unique bâtiment des alentours, de la
lutte impitoyable autour du Reichstag. La troisième propriétaire,
la légendaire »mère Busch «, tenait le bistro jusqu'à 1975 sous le
nom de " Schultheiss-Klause". Parmi les hôtes comptaient des
routiers et monteurs, mais aussi des habitants de Berlin –Est, des
clients qui pouvaient encore se permettre fréquenter le lieu de
rencontre Est-Ouest, jusqu'à la construction du mur en 1961.
Après la mort de la mère Busch le nouveau propriétaire négligeait
l'allure de l'ancien bistro si bien entretenu. La belle boiserie
sculptée était détruite et remplacée par formica et pacotilles en
1965. Seulement le buffet du fondateur survivait.
En mars 1984, Wolfram Ritschl achetait la maison. Après la
réorganisation et la modernisation de l'établissement, il ouvrait
le 10 août 1984 le restaurant russe "JOSEPH". L'aménagement des
espaces intérieures était réalisé par la peintre Paula-Anke qui
vit et travaille aujourd'hui dans les Cevennes (www.cevenne.info).
L'espace clair et blanc est organisé par une peinture
d'inspiration constructiviste.
L'artiste s'est laissé guider par le souhait de préserver
authenticité de l'espace en rendant hommage à un des mouvements
artistiques les plus révolutionnaires de l'époque de sa
construction. Déjà en juillet 1985, la »phase russe « de la maison
se terminait.
En 1987 avec le changement de nom , le PARIS-MOSCOU, nous voulions
rendre hommage à la nouvelle liberté de la Russie et la
possibilité de la rencontre Ouest & Est se dessinait à l'
horizon. Nous créions le cocktail de maison "Glastnost" (Kir
Royale et Vodka Gorbatchov) à cette époque.
A l'ouverture du mur de Berlin, le 9 novembre 1989 le restaurant
était pris d'assaut par la première vague de visiteurs qui
passaient le mur. Le restaurant était à l'époque encore dans un «
no-mans-land » non construit à l'ouest, havre accueillant dans
cette nuit mémorable ou tout Berlin était en fête. Le PARIS-MOSCOU
s'entend jusqu'à aujourd'hui comme un trait d'union entre l'est et
ouest.
L'équipe de 5 cuisiniers du PARIS-MOSCOU propose chaque jour une
vision culinaire d'excellence. Toutes les mets sont préparées le
jour même avec des ingrédients frais du marché. Les menus et la
carte du jour varient en fonction des saisons.
Une des spécialités est la préparation des poisson et fruits de
mer. La carte des vins offre environ 250 bouteilles dans un large
éventail de prix , venus de quatorze pays, y compris 20 vins
ouverts et 10 demi-bouteilles. Notre bière pression de choix
locale, est également très appréciée. Le vaste choix de digestifs
arrondit parfaitement chaque diner.
Les travaux de construction de l'immeuble du ministère de
l'Intérieur fédéral dans « le jardin » du PARIS-MOSCOU, s'avère
être très difficile à vivre, mais comme disent les Berlinois , ce
n'est qu'une épreuve comme une autre pour ce lieux d'accueil
historique, qui en sortira grandi, comme toujours depuis son
existence.
Le PM est ouvert du lundi au samedi à partir de 18 heures et
également du lundi au vendredi à partir de 12 heures.
Le dimanche est le jour de repos (sur rendez-vous, nous ouvrons
pour les grands groupes).

Чистое , белое помещение поделено на зоны, благодаря настенной и
потолочной живописи в стиле конструктивизма . Пуристическое
восприятие или «искусство отсечения лишнего» было девизом
художницы.
На первом этаже ресторана расположены три маленькие отдельные
комнаты, которые особенно подходят для частных вечеринок . Уже в
июле 1985 закончилась «русская фаза» в истории ресторана. Вместе
со сменой названия на PARIS-MOSKAU в 1987 году мы ощутили новую
свободу в России как возможность для Запада, и создали фирменный
коктейль «Glasnost» (Кир Рояль и водка «Горбачов»).
Команда из пяти поваров ресторана PARIS-MOSKAU ежедневно заботится
об эксклюзивном кулинарном предложении. Все блюда приготовлены
только из свежих продуктов. Меняющееся меню и утонченная, сезонная
карта - обязательная программа нашей кухни.
Винная карта предлагает около 220 позиций всех ценовых категорий
из тридцати стран, из них 8 сортов разливных вин и 8 сортов в
бутылках 0,35 л . Мы также с удовольствием разливаем бочковое пиво
Königs Pilsener. А многообразие выбора дижестивов великолепно
закруглит любой вечер.
Объемные строительные работы нового здания Министерства внутренних
дел наложили определенные требования для PARIS-MOSKAU. Но теперь
строительство закончено и мы хорошие соседи.
PM открыт для вас с понедельника по субботу с 18:00, а также с
понедельника по пятницу с 12:00.
Воскресенье - выходной день (для больших групп мы открываемся по
предварительной договоренности).
